RECIPE: Use Your Leftovers to Make Rice Paper Rolls

A great and easy snack or meal, very healthy for you, and just as simple as making a sandwich or taco!

Ingredients

Left over Chicken

Rice Paper Wraps

1 Carrot – finely sliced

1 Celery – finely sliced

1 Red Capsicum – finely sliced

1 Onion Finely Chopped

2 Cups Shredded Lettuce

Your Favourite Asian Sauces – Oyster, Soy, Sweet Chilli, Sweet and Sour

Method

Place warm water in a shallow pie dish.

Place each rice paper wrap in the water until soft

Place rice paper wrap on a plate and add the chicken and any choice of vegetable (or all of them. Add a little sauce. Roll up the wrap or make it into a parcel.

Have lots of serviettes on hand – the sauce does tend to drip out of the corners!!
