Here’s a light, healthy and simple dish that is exceptionally tasty and great no matter what your diet or fitness goals.
2 Avocados, peeled and sliced
2 Mangos, peeled and sliced
½ Cup Walnuts
3 lean Bacon rashers, finely chopped
1 Mignonette Lettuce
¼ Cup Olive Oil
2 Tbsp Lemon Juice
1 Tsp French Mustard
1 Tbsp Thickened Cream (the healthy kind, of course)
Cook lean bacon in pan until crisp, or place between paper towel and microwave for 3 minutes.
Arrange avocado, mango, walnut and bacon pieces over a bed of lettuce on a platter. Top with dressing.
Dressing: Combine all ingredients in screw top jar and shake well.
Tip To Peel Mangos:
With a sharp knife slice the two cheeks off the mango, cutting each cheek off close to the stone. With a dessert spoon scoop the cheek flesh away from the skin, keeping the spoon close to the skin and keeping each cheek whole.
